This bottle our staff pick for the month of November for good reason. It’s a bottle that got all of us at The Communion geeked. That’s what a good wine can do - make you feel curious about the grapes and how the wine was made and go in for just one more sip. This particular bottle was produced by boutique winery Camins 2 Dreams, located in Lompoc, CA. Composed of wife duo Tara Gomez and Mireia Taribó, who both bring an extensive winemaking background to this shared project, Camins 2 Dreams is what happens when passion and talent intersect! By sourcing grapes from Santa Barbara County’s Sta. Rita Hills, and using minimal intervention to produce terroir driven wines, Camins 2 Dreams is proof that wine can be an expression of both its origin and the producers.

This Camins 2 Dreams Gamay, which sings of fresh cranberries and dried prunes is a wine that will pair with any of your Thanksgiving dishes from start to finish… but we particularly love it with roasted white meats and root veggies.

Filipa Pato, 3B Beiras Brut Rosé (NV) x Smoked Salmon Starter

Hailing from Beiras, Bairrada, Portugal (the country’s unoffical home of sparkling wine). this wine is made from 80% Baga and 20% Bical. Baga is red, thick-skinned grape and provides luscious tannins to a wine. Bical is quite the opposite. This thin-skinned white grape is an acidity bomb and helps keep heavier wines in balance. Together, in this bottle of 3B Beiras Brut Rosé from Filipa Pato, you have subtle fruit - raspberry mousse, even, along with an exciting salinity and refreshing acidity, which help to keep this wine from being a run-of-the-mill sparkling rosé.
